Fried Egg and Sweet Potato Hash

Yet another yummy super easy egg recipe for a weekday morning.

  •  1/2 of a large sweet potato(peeled and grated in a cheese grater)
  •  1/2 tbsp coconut oil
  • 2 large eggs
  • chili powder (optional for garnish)
Preheat the oven to 350 degrees.  Have the sweet potato grated and ready to go, because if you haven't figured it out yet, coconut oil gets warm pretty quickly on the stove-top so you will want to have your ingredients ready to go.  Melt the coconut oil in a cast-iron or non-stick skillet (one you can put into the oven), when it is good and hot put your grated sweet potato into the skillet.  Using a wooden spoon mix around the sweet potato while it softens for a few min.  When the sweet potatoes seem pretty well cooked, maybe even a little dark around some of the edges (very yummy btw) you can push them a bit aside and add the eggs.  When the egg whites have set and are white, pop the skillet into the preheated oven to finish off the cooking.  Cook for about 5 min, or until they are to your desired done-ness.  I prefer mine over easy so they are a tad runny.  If desired sprinkle with a bit of chili powder and serve with some bacon.  Enjoy!
